Homemaker Moments- Favorite Salad Recipe

This is the second week to have a theme for Homemaker Moments. If you have no idea what I’m talking about go here for a brief explanation of Homemaker Moments.

My absolute favorite salad in the world is fruit salad. (Say it with me…”yummy yummy”)
Must-haves for fruit salad include: bananas, red grapes and fuji apples
Should-haves for fruit salad include: blueberries, strawberries and green pears
Could-haves for fruit salad include: Mandarin oranges and pineapple chunks
Funky-haves for fruit salad include: Cinnamon Oatmeal squares (cereal) or granola
Last fall all I could think about was fruit salad. I tried any and every combination of the above fruits and funkies. The crazy part about it all is that I wouldn’t have this craving until about 10:30 AT NIGHT! So, almost every night before bed I would cut up a little bowl of the fruits that we had on hand and enjoy my new love- Fruit Salad!!
I actually have one more salad for you today, friends. Because I’m nice like that.
Raw Broccoli Salad. Don’t grimace…it’s good.
Cut the “trees” off of a broccoli bunch, after rinsing of course, and toss them into a bowl. Add a cup each of sunflower seeds and raisins (I have also had this with diced tomatoes, but I don’t like tomatoes…Pluuuck!). Mix in a few tablespoons of plain yogurt, or if you like vanilla flavored, that is also good. Chill for about 30 minutes before eating.
I wouldn’t lead you astray…it’s really good.

yummmmm……salads…..I love salads! This is a hard one because I have a lot of favorites in this category.
I’ll choose two this time to share: “Chicken Salad” salad and Fresh Tomato Basil Salad.
Chicken Salad
Canned chunk chicken (or cut/shred cooked chicken)
Low fat organic yogurt (plain)
chopped red onion
chopped celery
almonds- sliced or slivers
seedless red grapes- cut into halves
sea salt & veggie pepper
Mix together all of the ingredients and serve on a bed of leafy lettuce……if you like chicken salad- this one will make you smile!
Fresh Tomato Basil Salad
Cherry tomatoes
Fresh basil leaves (chopped)
A few whole basil leaves (to garnish)
chunks of some good mozzarella cheese
Balsamic vinegar dressing (or mix together your own using minced garlic, olive oil and balsamic vinegar)
Mix together ingredients in bowl and then drizzle with dressing and chill in the fridge.
This is a great summer time side!

Ang and Jenny…you guys’ salads sound so healthy AND good! This is not my favorite salad but it is Mazie’s and one she has requested I make while she is with us over the next 3 1/2 weeks. It is a Taco Salad (of sorts).
Probably not all that healthy but good! :O)
I don’t have exact measurements or the actual recipe in front of me so I’m just winging it:
Lettuce (about a head, chopped)
Tomatoes (2 or 3, chopped…sorry Ang!)
Green Onions (3-4, chopped)
Shredded cheddar (or whatever type you like) cheese
Doritos (or other nacho flavored chips)
Ground beef (about a 1lb, browned)
Catalina dressing (to taste…I use about 1/4-1/2 of a large bottle)
Crush the chips and put in a large bowl. Add all of your chopped produce. Add beef and cheese. Top with Catalina dressing and mix. Serve immediately.
For whatever reason, this is one of Mazie’s oft requested meals when she’s with us. I usually don’t add the beef right after browning as it will wilt the lettuce. I let it cool a little then add to the salad. It is pretty good but certainly not a traditional taco salad. Also, left overs are soggy so you might let people add the dressing to their individual servings to preserve left-over salad crunchiness.

Great recipes ideas. I love the spinach and strawberry salad, Its 1 can of mandarin oranges, fresh strawberries however much you want. 1 small red onion. choppped, 1/2 cup toasted pecans, 1 avocado sliced, and a vinaigrette dressing whichever you prefer I like rasberry vinaigrette or sometimes I just add red wine or a good balsamic vinegar for the dressing. I also add grilled chicken and make a meal at of it. P.S. Wal mart has organic spinach that is really good.

Ok so in the previous post I forgot to mention use fresh spinach, however much you want. I’m a terrible typer, if thats even a word.
