Lentils contain lots of proteins, including the amino acids isoleucine and lysine. Apart from a high level of proteins, lentils also contain dietary fiber, Folate, vitamin B1, and minerals. Lentils are one of the best vegetable sources of iron.
Do I sound like I know what I’m talking about? Don’t get excited…
I don’t.
This is what Wikipedia told me about a legume that I have discovered I really like! LENTILS!!!
Infact, it became a favorite of mine this year. Last summer I was introduced to “Lentil dip”. It’s wonderful!!! And best of all, it’s easy to make and very good for you!
For lunch today I made Lentil cakes…mmm mmm! Also very healthy and easy to make.
So, I decided to share. Here are the recipes.
For LENTIL DIP you need:
1 cup of cooked lentils (follow the package directions for boiling them)
1/3 cup of Tofutti Sour Cream (this is tofu cream cheese- delish!)
1 tsp all purpose seasoning (I use Cavendar’s)
1/2 tsp paprika
Mix all the ingredients together and chill for about 30 minutes. (makes about 2 servings)
I like to eat this with black bean tortilla chips. They have a great seasoning on them that compliments so well!
For LENTIL CAKES you need:
1 cup cooked black beans (from a can if you prefer)
1 cup cooked lentils
1 egg
1 tbsp olive oil
1 tsp cumin
1/4 cup onions chopped
3 cloves of garlic chopped
Mash the beans and lentils in a medium bowl until a thick paste is formed. Add egg, oil, cumin, onions and garlic; mix well. Use your hands to shape into patties (makes about 3 medium or 4 small patties). Plop onto a griddle or non-stick skillet and cook until heated through.
Today we ate them with salsa (ketchup for the kids), but you could also put them on a bun with cheese and lettuce to resemble a burger.
